    Paella (Valencian and Spanish: is a Valencian rice dish that originated in its modern form in the mid-19th century near lake Albufera, a lagoon in Valencia, on the east coast of Spain.Many non-Spaniards view paella as Spain's national dish, but most Spaniards consider it to be a regional Valencian dish. Valencians, in turn, regard paella as one of their identifying symbols.
    There are three widely known types of paella: Valencian paella (Spanish: paella valenciana), seafood paella (Spanish: paella de marisco) and mixed paella (Spanish: paella mixta), but there are many others as well. Valencian paella consists of white rice, green vegetables, meat (rabbit, chicken, duck), land snails, beans and seasoning. Seafood paella replaces meat and snails with seafood and omits beans and green vegetables. Mixed paella is a free-style combination of meat, seafood, vegetables, and sometimes beans. Most paella chefs use calasparra or bomba rices for this dish. Other key ingredients include saffron and olive oil.

      what a shame... do you really dare to call it paella I am from Valencia that is an insult for us. Not even in Spain they cook paella properly. But that!! that is beyond any ad one I ever seen in my life. There is nothing in there or the way it has been cooked like a real paella.

                                          Our families must have been neighbors because this is pretty much how we made it... :)
                                          This about brings me to tears, remembering as a young person living with my family in the San Francisco bay area, we would get seafood on the warf, fresh that day from the bay, go dig the "butter clams" and catch some crabs off the dock ourselves in Marshall, by Bodega Bay (right where they filmed "The Birds" and just about the same time)... But, instead of chicken, my dad and I would go to the fields by the end of the runways near the Oakland airport and hunt pheasant (before the nazi's took over California).
                                          Fresh seafood from the bay, nice, juicy pheasant (with a few no. 7 bird shot pellets for extra seasoning). LOL Or sometimes we'd hunt up some rabbits...
                                          Either/or, it doesn't get any better than that. But wed make sure the rice got a nice, toasty crust on the bottom, I didn't see him do that, here, some paella purists would call that sacrilege. LOL
                                          Damn. I'm gonna have to tell my mom about this and then make some for my birthday this weekend. No pheasant, though. Or rabbits. Maybe I can track down some quail. Or, at least, some cornish game hen. Anything besides a chicken thigh. LOL

                                              There's several different kinds of paella. I've had it several times in New Jersey prepared by Puerto Rican chefs. This looks a little different but delicious.

                                                                  A ver, ya todo empieza mal cuando dice añadir "aceite vegetal y no el típico aceite de oliva virgen que usamos siempre". eso ya era un presagio de lo que venía después. Aún así me moría de curiosidad. Bueno, eso que ha cocinado es rancho. No tiene otro nombre. Ah, mención especial a la espátula de silicona que utiliza para revolver todo. ¡Qué clase!
